Dry hopping, and how to avoid hop creep

Dry hopping is the least technical thing in brewing — you put hops in beer and wait — and it still manages to catch people out, occasionally dangerously. Hop creep is the reason bottles sometimes explode weeks after packaging, and it is worth understanding properly.

What dry hopping does and does not do

Dry hopping adds aroma. It adds almost no bitterness, because the alpha acids need heat to isomerise, and there is none. Anyone telling you a dry hop made their beer more bitter is usually describing polyphenol astringency from too much hop matter sitting too long.

The compounds you want are volatile oils, and they are fragile. They boil off in a kettle, which is why aroma has to be added cold.

Timing

The old advice was to dry hop after fermentation finished. Modern practice usually disagrees, and for a good reason: biotransformation. Adding hops while yeast is still active lets yeast enzymes convert bound hop compounds into more aromatic forms, producing fruitier, juicier character than the same hops added later.

A practical approach for a modern IPA:

  • First addition around day 3, when the ferment has slowed but is not finished — roughly 70–80% of the way down.
  • Second addition once terminal gravity is reached, for pure aroma with no biotransformation.

For a cleaner West Coast style where you want the hop to read as itself, a single addition at terminal gravity is fine.

Contact time

Two to four days is the sweet spot. Very little additional aroma is extracted after that, and the downsides accumulate: grassy, vegetal flavours from prolonged contact with plant matter, and polyphenol astringency.

Leaving hops in for two weeks does not make a beer twice as hoppy. It makes it taste like lawn clippings.

Now, hop creep

This is the part that matters for safety.

Hops carry their own enzymes — amylases, including glucoamylase. When you dry hop, those enzymes go into the beer. They do what amylases do: break long-chain dextrins into fermentable sugars.

Dextrins are the unfermentable residue that gives beer its body. Your yeast finished because it had run out of things it could eat. Hop enzymes now hand it a fresh supply.

The consequences:

  • The gravity drops further after you thought it was finished — sometimes several points.
  • New CO2 is produced. In a sealed bottle, that adds to carbonation already there.
  • Diacetyl reappears. Renewed fermentation produces it, and if the beer is cold-crashed or packaged there is no active yeast left to clean it up. You get a buttery beer that tasted fine at packaging.

Gushing bottles, over-carbonated kegs and — genuinely — burst bottles all trace back to this. It is more pronounced with heavy dry hop rates and warm conditioning, which is exactly what a hazy IPA involves.

How to avoid it

The core principle: let the creep happen before you package, not after.

  • Dry hop warm and give it time. After the dry hop goes in, hold the beer at fermentation temperature for three to five days. The enzymes work, the yeast eats what they release, and the process finishes while the beer is still in an open fermenter.
  • Confirm with a hydrometer, not a calendar. Take readings two or three days apart after the dry hop. Stable readings mean creep has run its course. A reading taken before the dry hop tells you nothing about it.
  • Cold crash before packaging. Dropping to near 0 °C for a couple of days slows the enzymes sharply and drops the hop matter and yeast out.
  • Keg rather than bottle for heavily dry-hopped beers. A keg has a pressure relief valve. A bottle does not.
  • Reduce priming sugar if you must bottle a heavily dry-hopped beer, and accept the risk knowingly.

Warm or cold?

Aroma extraction is faster and more complete warm. Cold dry hopping extracts less, but it also extracts less of the harsh vegetal material and largely sidesteps creep.

Most brewers land on: dry hop warm for aroma, hold long enough for creep to complete, then cold crash. That gets you the aroma of a warm dry hop and the stability of a cold one.

Practical quantities

For 23 litres:

  • Noticeable aroma — 50 to 100 g.
  • Modern IPA — 150 to 250 g, usually split across two additions.
  • Beyond about 8 g per litre, returns diminish sharply and astringency rises.

Pellets work better than whole flower for dry hopping — more surface area, and far less beer lost to absorption. Whichever you use, keep it cold and sealed until it goes in. Hop aroma is the first thing to leave a poorly stored pack.
